1. Harvest
The olives are harvested exclusively by hand directly from the tree. This ensures that only undamaged olives are processed into real extra virgin olive oil in the oil mill.
2. Transport
Within a few hours of harvesting, the fresh olives are transported directly to the oil mill in well-ventilated crates.
3. Wash
In the first step, the olives are carefully washed, freed from olive leaves and dried. Only healthy, not overripe olives are processed.
4. Grind
Then the olives are crushed in a modern plant by rotating knives and processed into olive pulp. Air contact is deliberately allowed here so that the green aromas of the olive oil can fully unfold.
5. Malaxing
The olive mash is kneaded below 25°C in an airtight stainless steel tank. Olive enzymes free microscopic oil droplets, which then coalesce into larger droplets. The oil droplets are also enriched with valuable substances from the olive.
6. Extract
In a centrifuge, the liquid part of the olive pulp (oil & fruit water) is freed from solids such as stone and skin. Here, the addition of water is deliberately avoided, since the most valuable substances in terms of taste and health are water-soluble and would otherwise be washed out.
7. Clarify
In this operation, the last aqueous impurities are removed in a vertical centrifuge to obtain the purest extra virgin olive oil.
8. Filtering
In order to preserve the olive oil, it must be filtered immediately after extraction. The oil is pumped through cellulose filter plates to preserve the quality of the olive oil for as long as possible.
9. Bottling
In the last step, the olive oil is filled into our coated glass bottles and covered with the noble gas argon so that the oil retains its original freshness for as long as possible.
